The impressive rise of non-alcoholic drinks company, O.T.C Beverages Limited

OTC Beverages is a non-alcoholic premium beverage based on Caribbean flavours. Since COVID-19, the demand for nonalcoholic drinks has grown tremendously fast. With more people choosing to stay at home and enjoy a non-alcoholic drink of an evening, Shirley has managed to hit the market with a great product at a time when the non-alcoholic beverage industry is booming. “The fact that we have survived the pandemic, continue to win awards and have strategically used the most optimal platforms to get our brand known without funding is an achievement. In addition, my background is not in the Food & Beverage industry and to have come so far with just an idea and make it a reality and win awards is an achievement.”

Recently, the company attended Going Global, which is an exhibition that was

planned two years ago before COVID-19. The exhibition was a real success and put OTC on the map of brands to look out for in 2022 and beyond. “We were an anomaly amongst exhibitors as we were an actual supplier. There was a lot of interest in our brand and since then we have been approached by a number of distributors to take us to the next level,” mentioned Shirley.

Offering a tasty and luxuriously refreshing flavour, OTC Beverages already has plans to increase its product range. Currently offering Still or Sparkling Gingerbeer, Still or Sparkling Sorrel – which is a premium and organic soft drink that delivers a refreshing lemon ‘kick’ flavour, and Still or Sparkling Butterfly Pea Flower & Lime, Shirley mentioned there are new flavours to come in 2023.

In closing, we asked Shirley how she felt receiving yet another award, she responded, “I am so happy to have achieved this award with such a prestigious industry magazine. To be recognised for outstanding achievement for my hard work and dedication means we are getting noticed and industry experts are willing to award us for our work. Combining high quality ingredients together with an elite level of product

Collaboration between two iconic Welsh brands is the “sweetest marriage”

Having brewed simple and elegant mead recipes for twenty years, Afon Mêl are now moving into new ground with their limited release, small-batch meads. These meads aim to explore the impact that different ageing conditions will have on their carefully chosen and highly valued honeys.

The first two products in this Limited edition collection are further aged variations on their much-loved Heather Mead (Golden Fork, 2019 Great Taste Awards) and are matured further with Welsh producers Penderyn Distillery casks. Sam Cooper, owner and head mead-maker at Afon Mêl said, “This collection of small batch meads includes the two products matured in ex-bourbon and ex-madeira barrels which have been used at Penderyn to mature their Welsh whisky, once emptied are filled with mead. What comes out is wonderfully and subtly different to what goes in”.

The provenance of the barrels; first bourbon or madeira, then Penderyn Single Malt Welsh whisky, makes a significant difference to the overall profile of the Afon Mêl meads, with the ex-madeira adding an intoxicating blend of citrus and spice aroma alongside the heather honey's naturally smokiness, and the ex-bourbon lending the product a little more heft with some potent vanilla notes.

To make the collaboration even sweeter, Afon Mêl and Penderyn Distillery have

established a barrel-share agreement, so we can hope to see some mead-cask aged whiskies released at some point in the future. This experiment has been five years in the making, but if there's something whisky and mead makers can agree on it's that patience is a necessity when making the finest products possible.

Sam also added, “All the new meads created allow us to explore different mead making methods, with these small batch meads we can showcase a new and exciting side to Afon Mel’s Meads.” Sam seems to have a fair few ideas buzzing around his head, and only time will tell which will end up becoming the next small batch release. For now, the Heather mead matured in Penderyn casks make for a very fine first installment.

Print machine breaks new ground with faster

AquaLab water activity analyser for food testing applications

Water activity is a key quality metric in the food industry, as it affects food safety, shelf life, taste, aroma, texture, mouth feel and colour. By establishing acceptable water activity levels and then monitoring water activity at various points in the production process, food manufacturers can reduce costs and avoid reputationally damaging quality issues and expensive product recalls. Water activity is even more important today, as manufactures come under pressure to reduce salt and sugar content. Furthermore, if packaging is redesigned to reduce or eliminate the use of plastics, the management of water activity plays a crucial role in maintaining food safety and shelf life.

Next year, we will be concentrating on the smoking courses which we host at the Keep, a purpose-built structure where we share the knowledge and skills which are fast-disappearing in this world, to preserve those old techniques for future generations who would like to know how to preserve foods in times of abundance; methods which are simple to achieve at home with minimum equipment.

You will learn how to identify fresh fish, fillet them, taste different salts, then

process them. Lunches and hot drinks are provided on-site. Bookings must be made through our website; dates for different activities are on the website now. We also offer fun 'Coastal Harvest' trips, where you will learn how to identify a variety of wild coastal foods, and how to use them in your own kitchen.

Manufacturing Matters

LOBO systems is now approved for use at 11 AB Agri locations

Designed and manufactured by LOBO Systems, the British firm with the world's most sophisticated work platform system, has won orders from AB Agri, part of the £13B giant Associated British Foods PLC.

The facilities convert grain into pellets by grinding it down and compacting it. This is done through various machines, conveyors and elevators, all requiring maintenance.

The engineering & maintenance teams require a single piece of equipment that would allow them to access all the machinery inside their

building, including motors, bearings and hatches that need safe working access.

The LOBO platform system and its integrated Lifting Slider Beam configurations were perfect. Each site has a tailor-made "pool" of LOBO components that can build a tower to suit any issue brought to LOBO's attention.

Drinks industry buzzing at eclectic drinks exhibition

This year’s imbibe Live was buzzing with industry experts from the drinks industry. Held in its usual venue Grand Hall Olympia in London from 4-5 July 2022 visitors from the hospitality and drinks sector were spoilt for choice with stands, masterclasses and tasting areas.

With COVID-19 safety precautions still in place attendees had peace of mind while sampling the latest new wine or spirit ranges. With designated tasting rooms, cocktail lounges, wine bars, craft showcases and new liquid launches, there was something for everyone from wine connoisseurs to gin lovers.

Imbibe Live loves to cascade new drinks industry knowledge through its famous masterclass sessions. This year was no exception with scintillating topics such as UK Government alcohol duty reforms, to mindful drinking and the widening popularity of alcohol free drinks.

The exhibition is the best in the industry for exploring wines including burgeoning English vineyards, new flavours of cider, exciting dazzling cocktails and even the latest bar snacks! Exhibitors come from all over the

HACIEN is a premium flavoured tequila brand founded by two Yorkshire business owners — Seb Francis and Jordan Myers — in 2022. They aim to change UK perceptions of tequila away from “shot culture”, show the quality that authentic tequila offers, and promote its heritage and culture.

HACIEN is named after the haciendas of Jalisco, Mexico where their tequila is sourced and bottled. What a great year for KBE Drinks, they’ve welcomed some new exciting brands to their portfolio and their biggest brand Kingfisher has had a major rebrand and repositioning. Food on third-party projects on a number of occasions, this is the first time TOMRA Food has become a direct client. Previously, TOMRA Food used a different type of steam boiler to produce steam for the peeling process, but this was insufficient for their needs. The Babcock Wanson

VAP600RR Coil Type Steam Boiler, featuring three full gas passes plus an in-built combustion air pre-heater for high operating efficiency, proved an ideal replacement.

Myth Drinks is the vision of Colette Safhill.

Having eschewed alcohol for over 20 years Colette was keen to find an alcohol-free spirit which had flavour, mouthfeel and evoked a feeling of fun and holidays. Inspired by the Malibu of her youth, Colette set about recreating the sunshine in a glass she so fondly remembered.

As with all things, the process was a bit bumpy and a little more scenic than she had expected, lots of learning, lots of smiles, some tears and a couple of years later and the drinks were produced. Along the way Colette also created a Dark Spirit (particularly good for an old fashioned, dark and stormy or Calypso coffee) and an energy drink The Horny Goat!

The first short production run of Myth arrived in our storage unit in May this year. It is fair to say at this point we weren’t sure what to do! We entered the IWSC to reassure ourselves we had a market ready drink, and we were awarded the bronze for our Dark Myth the gold for our white cane and the trophy for the overall zero alcohol category winner. It was certainly a way to get noticed! This was followed by The Christmas Drink of the Year from the Free From food Awards and finalist from the taste of Yorkshire awards!

What comes next? We don’t know for sure but we are certain there will be lots of smiles!

Resource Efficient Pack Of The Year These awards recognised that the replacement film had 60% recycled content by combining Post-Consumer Recycled waste (P.C.R.) with industrial regrind, to produce a film which met the Premier Foods commitment to the UK Plastics Pact. Research for the project was over a year in the making and the film was also trialled and approved in conjunction with capital investment in new machinery at the Premier Foods site. In summary the replacement film eliminates the use of PVdC, which is disruptive to the recycling of plastics.

Artificial intelligence impresses at Aquaculture UK conference

The Aquaculture UK 2022 was finally back at the Macdonald resort in Aviemore, Scotland from 3-5 May 2022 after last years’ COVID-19 postponement.

This is the UK’s largest, free and only aquaculture exhibition and conference showcasing the latest sustainable business practices and digital technology. With over 200 exhibits from fish care and vaccinations, wet clothing companies to the latest artificial intelligence in fish farm wireless sensors there was something for everybody.

The three day calendar event gave industry delegates the opportunity to network with suppliers from international destinations. There were representatives from all aquaculture regions including 28% from the Middle East. This year’s exhibition was so popular that 92% of exhibitors said they would exhibit again.

The conference had speakers from a multitude of backgrounds including The Centre for Aquaculture

Technology, The University of Stirling and the WISA advisory group. The topics were dynamic and cutting-edge including gene editing, robotics and welfare of cleaner fish.

The highlight of the conference were the annual Aquacultrue Awards recognising commitment to excellence across the industry. The expert panel were interested in companies practicing sustainable development, following rigorous standards in husbandry and premium end products. Noteworthy recipients included FAI Farms for Outstanding Contribution to the Industry and Pacific Ocean Culture for the Judge’s Special Recognition Award.

The next Aquaculture UK exhibition and conference will be held in Aviemore, Scotland from 14-15 May 2024.

Fish health monitoring – It’s in our blood

As with terrestrial vertebrates, the blood of fish contains a wide variety of electrolytes and proteins (collectively referred to as biomarkers), the presence of which serve to maintain physiological homeostasis – a key component and indicator of health and welfare. Upsets to this balance normally indicate that something might be wrong.

Practitioners in the worlds of human and terrestrial veterinary medicine have been using these biomarkers for decades as indicators of the health status of their patients. Until recently, however, their routine use in aquatic veterinary medicine has been very limited, with PCR, histology and microbiology being the preferred tools of the trade. This may be about to change.

WellFish has, over the last 3 years, developed a large and robust database of case information the power of which is beginning to suggest that, rather than reacting to issues when they arise, there is much merit in gaining insight into them in advance. This is effectively the difference

between monitoring health rather than simply diagnosing disease.

It is not difficult to see how a proactive approach to fish health management through biomarker monitoring not only helps to mitigate problems before they arise but also serves to improve stock welfare by allowing managers to align interventions according to the status of the stocks in their care.

World’s biggest food fair ‘SIAL Paris 2022’ next stop for Caribbean businesses after impressive display at UK trade event

Caribbean food and drink was one of the hottest attractions at the recently concluded Speciality & Fine Food Fair 2022 at London’s Olympia.

Ten regional companies exhibited under the ‘Absolutely Caribbean’ pavilion where representatives from leading retailers including Sainsbury’s, Marks and Spencer, Fortnum & Mason and Whole Foods Market, amongst others, sampled a range of products made with indigenous ingredients including hot pepper sauces, turmeric paste, jellies, jams, tea, beer and rum.

Caribbean food created a buzz at the Fair after Naledo’s ‘Truly Turmeric’ whole root paste, and CariBelle Foods’ ‘Lime & Mango Dip’ were chosen as ingredients for two live cooking demonstrations. These sessions led by renowned chef Steve Walpole, captured the imagination of attendees with his bespoke recipes.

The companies took part in the Fair with the support of the Caribbean Export Development Agency and the European Union – Superb Blend (Barbados), Old Duppy

(Barbados), Naledo (Belize), Kalembu (The Dominican Republic), Shavuot (Jamaica), Flauriel (St Kitts and Nevis), Pringa’s (St Vincent and the Grenadines), St Lucia Distillers (St Lucia), the Antillia Brewing Company (St Lucia), and CariBelle Foods (Trinidad and Tobago) with the aim of capitalising on the growing global demand for innovative flavours.

Caribbean food and drink will be on the menu once again as 14 regional businesses head to France from 15th-19th October to take part in the world’s biggest food tradeshow SIAL Paris 2022.
